Lemony Avocado Truffles


1 ripe avocado, Juice and zest of one lime or lemon, 1/2 cup coconut oil, 1/4 cup honey, 1/4 cup shredded coconut ( organic &unsulfured),1/4 cup hemp or sesame seeds or both


Peel and remove the seed of the avocado, place into blender or food processor. Squeeze juice of lime/lemon on top and add zest. Add coconut oil and honey and blend smoothly.

Transfer into a bowl and place in the freezer for 1 hr or until solid enough to make balls. Place the shredded coconut and seeds into a plate. Spoon avocado mixture and form balls and roll in coconut shreds. Once done the balls place them in the freezer for a couple of hours. Do not let them sit at room temp for too long.h

Avocados are full of mono-saturated fats which lower cholesterol. They are a great source of potassium, fiber and protein. Coconut Oil is a great food for weight loss due to medium chain Triglycerides(MCT). Limes are a great source of vitamin A & C, and minerals Calcium and Potassium.
