A Vegetable to Nibble on - Carrots

What's up doc? The favorite food of Bugs Bunny hardly needs a description. Carrot's benefits are legendary. Though we usually associate carrots with the colour orange, carrots can also be white, yellow, red or purple and have a crunchy texture and a slightly sweet taste, while the greens are fresh tasting and slightly bitter.

Carrots are a great source of beta carotene: a powerful anticancer, artery-protecting, immune-boosting, infectionfighting antioxidant with wide protective powers.

Beta-carotene also helps to protect vision. Have you ever heard that carrots are good for your eyes? After beta-carotene is converted to vitamin A, it travels to the retina where it turns into a purple pigment called rhodopsin that plays a key role in night-vision. Beta-carotene also provides protection against cataracts – the leading cause of blindness with the elderly.

High doses of Beta-carotene have been found to substantially depress blood cholesterol levels and promote regularity. Even eating one medium carrot can cut lung cancer risk in half, even among formerly heavy smokers, while eating a carrot a day has been found to cut stroke rates in women by 68 percent.

Minted Carrots with Pumpkin Seeds
This is a delightful, easy, and refreshing way to serve carrots. The pumpkin seeds add a wonderful texture and extra nutrition, complementing many dishes!

Ingredients:
6 medium sized carrots peeled and cut in turned pieces
1/2 TBS fresh chopped parsley
1 TBS fresh chopped mint
1 TBS coarsely chopped pumpkin seeds
2 TBS lemon juice
extra virgin olive oil to taste
salt and cracked black pepper to taste
